Family Fried Rice
THAI FRIED RICE
At our house we eat fried rice once a week, and the leftovers go a long way too! It's the perfect way to get in plenty of veggies and there are a thousand ways to make it!
Serves 4
Ingredients:
1 cup uncooked white rice
3 eggs
80g carrot - roughly 1 carrot
80g leek
2 garlic cloves
4 Pak Choy leaves
2 tsp fresh ginger
3 tbsp fresh coriander
3 tbsp fish sauce
2 tsp honey
1 tbsp + 1 tsp lard
1) Cook the rice using the absorption method and allow it to cool in the fridge over night
2) Crack the eggs into a bowl and whisk well. Set aside
3) Slice the carrot, leeks and pak choy
3) Chop the garlic and ginger finely and add it to a hot pan with one tablespoon of lard. Cook for 30 seconds on high
3) Add in the eggs and cook for 2 minutes. Scrape to the side of the pan once cooked
4) Next add in another teaspoon of lard and Stirfry the carrot, leek and pak choy for 2-3 minutes
5) Add the rice into the pan with the veggies and stirfry on high until hot
6) Pour in the fish sauce and honey and fry for two minutes
7) Stir through the finely chopped fresh coriander to serve
