Tuscan Kale Minestrone - GF, Vegan

Growing up this was a pretty regular fixture in our household! Like a lot of todays favourites, this dish was born out of the need to not waste food and use what was around them at the time. This humble tomato and veggie soup has stuck around ever since, and for good reason! Our take on the classic includes Canellini beans for a protein boost and tuscan kale for a dose of greens without the bitterness! Best served exactly as it is, or with a touch of chilli and a side of crusty sourdough!
